Its not the pixels, its the backlight.An hps backlit display would be stupid bright and ugly as sin too. It would be like trying to play a Game Boy Color under an HPS streetlight, only an order of magnitude more easibly legible.

I like math, lighting, computers and electronics(but I detest pointless ruinage of nice old stuff). LEDs should be better thought out. they are actually quite good if they are good quality. They should be built to a long life not to a cheap price!

What's your educated guess on the smallest HPS bulb they could ever hypothetically produce? Do you think they can shrink it can down to the size of a pixel with modern science?

Nope. There are so many reasons why it would be impractical, including run-up time and the intense pressures required. But it would look crazy cool, with pixels fading out, starting up with flickery flashes and runnning up through mercury color as you used the computer.
