It's a nice simple recipe too, half an hour or less to prepare, then an hour in the oven (with lovely smells) and you're done

We thought we'd already posted it, but we can't find it. Sammi is searching the archives as we speak.

Here you go:

I'm not sure if I already posted this before, but here it is again: :wndr:

Bananananana  Bröt
(with a twist)

Ingredients:
   (Preparation time under 30 minutes)
It will take less time if there are two people doing the prep work

    • 10 oz (285g) of Plain flour
    • 1 tsp of Bicarbonate of Soda
    • ½ tsp of salt
    • 4oz (110g) of butter (extra needed for greasing)
    • 8oz (220g) of caster sugar
    • 2 free range eggs
    • 4 ripe banananananas (well squished)
    • 2 handfuls of raisinses
    • 3 fl oz (85ml) of buttermilk (or add 1 ½ tsp of lemon juice to normal milk)
    • 1 tsp of vanilla extract (vanilla flavouring is cheaper and does the same job)

Method:

    1. Preheat oven to 180ºC /350ºF/Gas mark 4

    2. Sift the flour, Bicarbonate of Soda and salt into a large mixing bowl

    3. In a separate bowl, cream the butter and sugar together until light and fluffy.

    4. Add the eggs, squished banananananas, buttermilk and vanilla extract to the butter and sugar mixture and mix well. Fold in the flour mixture.

    5. Grease a 8in x 5in loaf tin / 20cm x 12.5cm and pour the cake mixture into the tin, adding the raisinses a few at a time.

    6. Transfer to the oven and bake for at least an hour, or until well-risen and it is a deep golden-brown.

    7. Remove from the oven and test with a skewer, then cool in the tin for a few minutes, before turning out onto a wire rack to cool completely before serving..
