If I operate a probe start metal halide lamp on a mercury vapor ballast and 750-1000v 2 wire parallel ignitor, will it slow down the rate of electrode sputtering compared to operating the lamp on a high OCV CWA ballast?

No. In both setups the lamp will last the same.

The only difference I would expect are the lower losses so smaller size and less weight of the lower OCV ballast.
Otherwise no difference for the lamp itself at all...
